I read about a family that worked over the course of several years to be able to buy a home in cash.... I can obviously see the advantages of not paying interest but is there any other benefit to it?

You're still paying rent for years on end while saving up to pay cash for a house so wouldn't some of the savings end up getting canceled out?

Are most sellers willing to substantially drop the price for an up front payment like that since they don't have to wait for you to get loan approval?

You need to do the interest calculations. Paying rent a little longer isn't the worst idea in the world.
